On the corner of Colfax and Yosemite rests Tacos Acapulco, one of Colorado's best taco spots. Unless you're in the market to do something your mother wouldn't approve of, it's much further down Colfax than you'd ever want to be. The building itself is about as unwelcoming as its surroundings—but don’t let the rough exterior fool you. What it lacks in curb appeal, it more than makes up for in flavor. Each taco comes nestled in a duo of soft corn tortillas with a questionably generous portion of meat. Served with diced onions and cilantro, the hot red salsa is what lingers—in the best way.
Don't expect to find a seat inside - there aren't any - but the nice lady behind the counter will serve up orders faster than you can count the dollar bills you'll need. Which won’t be many, a $20 bill here feeds a family, or one very ambitious eater.
For those looking for authentic Mexican street food at its finest, Tacos Acapulco delivers an experience so good you'll forget you're eating in your parked car with one eye on the rearview mirror. Despite its rough edges, or perhaps because of them, this 24-year-old establishment has become one of my Denver favorites.
